1 (1 lb.) can cream style corn (2 cans)
1 egg, slightly beaten
1/2 c. half and half cream
1/2 c. cracker or bread crumbs toasted
1/4 c. chopped onion
1/4 c. chopped red bell pepper or 2 tbsp. chopped pimento
4 tbsp. butter
Salt and pepper
Heat oven to 350 degrees (moderate). Combine all ingredients. Pour into 1-quart baking dish. Bake 35 minutes. 4 servings.
SCALLOPED CORN AND HAM:
Make scalloped corn except add 1 cup diced cooked ham.
CHEESE SCALLOPED CORN:
Make scalloped corn except add 1/4 cup grated Cheddar cheese.
