Ingredients:
8-10 medium sized mixed cooking apples, peeled, cored, and diced
½ cup apple juice concentrate
scant ½-3/4 cup vanilla sugar,
1 teaspoon Saigon cinnamon
¼ teaspoon fresh grated nutmeg
1 tablespoon fresh squeezed lemon juice
¼ teaspoon sea salt or pink salt *secret to depth of flavor
1. In slow cooker, combine apples and juice.
2. Cover and cook on Low 4-6 hours, or until apples are very soft.
3. Add sugar and cinnamon if you wish (or reserve the cinnamon and sprinkle over finished sauce), and cook on Low another 30 minutes.
4. Sprinkle with cinnamon at serving time if you wish (unless you’ve already added it in Step 3).
This applesauce will be slightly chunky. If you prefer a smoother sauce, puree.

How do you make your vanilla sugar? I notice you use it in a lot of things.
Using 10 lb bag of sugar in a large jar I typically put 6-10 fresh vanilla beans. And wait a couple of weeks. It is just one of the ways I store sugar to my taste.
