1 pound fresh green beans, washed, trimmed, strings removed
1/2 cup chopped, toasted walnuts
1/2 cup coarsely chopped fresh mint leaves
1/2 cup minced shallots
2 tablespoons white wine or rice vinegar
1/2 teaspoon salt
1/4 teaspoon ground pepper
1/4 cup walnut or peanut oil
2 tablespoons extra-virgin olive oil
Break or cut the green beans into 2-inch pieces. Place the beans in a vegetable
steamer over 1 inch of boiling water. Cover and steam 5 to 6 minutes, or until
the beans are tender but crisp. Rinse immediately under cold water and pat dry.
Place the beans in a medium bowl and add the walnuts. Toss to combine.
In a small bowl, combine the mint leaves, shallots, vinegar, salt and pepper.
Slowly whisk in the walnut and olive oil. Pour the dressing over the beans and
gently toss to coat. Cover and let sit for 30 minutes before serving.
