6 med. potatoes, chopped half in large chunks half in small Dice
1 Large onion diced, 3 stalks of celery Diced
1/2 c. butter
1/2 c. Potato flakes
1 ham steak diced
2 c. milk
1 tsp. parsley flakes
Dice peeled potatoes, celery and onions. Cook onions and celery in ¼ cup of butter. Place potatoes, onions, and celery in crockpot cover with water. Add ham and cook on high 3-4 hours until potatoes are soft. Stir to partially to mash potatoes, add milk with potato flakes. Turn Crockpot on Low. Add rest of butter, salt, pepper and crushed parlsey to taste. Simmer 10 minutes and serve. Serve with cheese, crackers, crumbled bacon and fresh ground pepper. Perfect for a cold and rainy spring day.
